Why would you want to separate steering from throttle? Because from time to time you want to be able to hang on tight without influencing the throttle. In other words, when you're "holding on for dear life" you will likely be holding a twist throttle wide open without even knowing it, which will make whatever bad situation you're in worse. A lot worse.
That being said, there are a lot of new riders out there with sore thumbs that might really benefit from a quick, inexpensive conversion from a thumb throttle to a twist throttle. I know my kid complains about a sore thumb when we do long rides. Even when he's wearing gloves.
If you'd like to consider a twist throttle for your ATV, check out this Handy Throttle ATV accessory review and decide for yourself if it's worth the time and money. I've also put together a step by step guide to show you how easy it was to install the Handy Throttle.
